Our Syrah is made in the traditional Northern Rhône, Côte Rôtie style. This is where we co-ferment with Viognier. In our case we use 5% Viognier, which are white grapes, that are fermented together with the red Syrah grapes. The small addition of Viognier offers a florality in the nose for balance and helps to make the color of the wine more intense.

Aroma: Black pepper is prominent on the nose right out of the gate. There are notes of anise, dark cherries, and huckleberry jam along with just a hint of juniper berries. There is a light meaty aroma synonymous with Syrah that comes along as the wine lingers in the glass and it is wonderful. 

Taste: The palate is restrained and refined as most wines made in this Côte Rôtie style are. This is a wine made to pair with food rather than being a big jammy, oaky Syrah that would over power any food being served with it.  

Food Pairing: Steak au poivre (peppercorn crusted steak) would be a great accompaniment to this wine. For those that are fans of beef and bacon, a bacon wrapped Filet Mignon would also work tremendously well.
