2021 XXXVI Cabernet Sauvignon
Aroma: The aromas of dried Bing cherries are first to greet you. As the wine develops in the glass, raspberry fruit leather jumps in with notes of blackberry jam. Hints of candied chestnuts along with light oak and pencil lead add to the complexityof the aromatic bouquet.
Taste: This Old vine Cabernet Sauvignon is a treat for your palate!! It is wonderfully easy to drink while still being complex and “Big” with good tannin structure, but not overly astringent as some Cabernet Sauvignon can often be. The Bing cherry notes persist throughout the palate, beginning,
middle and finish with all the other bits found on the nose weaving in and out to greet your tastebuds.
Food Pairing: A beautifully grilled steak will pair tremendously with this wine. If you are a fan of sauteed mushrooms and onions with your steak it would make for a party in your mouth!!
