2021 Order of the Cave

Aroma: At first whiff this wine is rich and complex. Cocoa nibs, dried plums, mashed dates, blackberry compote and dried cherries are just some of the aromas present in the glass.

Taste: The palate offers every bit of complexity that the aroma promises. There are deep rich flavors with coffee grounds added to the mix of the things noted. There is an amazing structure present in this wine that will give it nice longevity, for those who like to cellar wine. This is certainly a wine to consider attaining a number of bottles and see how it ages in the cellar.

Food Pairing: I think this wine will pair tremendously with an old school Beef Wellington, covered in a rich demi-glace.
